My wonderful baking powder/cream of tartar biscuits didn't rise. They were in dense lumps and had an unpleasant taste. The Astoria Red Cake didn't rise. It has a leavening of vinegar and soda. It was dense and kind of gummy. The flavor was ok, but not as good as usual.

We apologize for the trouble with your recipes! If you're not already we would recommend spooning the flour from the bag into a measuring cup and then leveling off the excess (if you are not doing this already). Sometimes if you scoop directly from the bag, the flour gets compressed, leading to too much being used which can cause a gummy texture or density. If you are already spooning from the bag, you can try reducing the amount of flour by 1/8 to ¼ cup to see if this helps, or if the dough is too dry you can also add more milk by the tablespoon as needed. It can also be helpful to let the dough rest for about 10-30 minutes before portioning/baking as this lets the dough “hydrate” and more fully absorb liquid. I used to think this particular brand of gluten free flour was good, that is until I started consuming a store-brand version of flour for a while. Recently, the store brand went out of stock, so I purchased this. Boy oh boy am I disappointed. Simple pancakes with this brand were so gummy, no matter what I tried - despite adding more flour to the mix to thin it out thinking the liquidity was the reason for the texture. The other brand always produced fluffy and normal pancakes. Maybe this flour serves other purposes better, but this experience will keep me away from this gluten free flour in the future.

Something seems changed with this 1:1 baking flour. Baking seems to turn out with a grittier texture than before which I don’t like.

Thank you for your review. Nothing has changed with our flour but letting your dough/batter sit for about 10 minutes before baking can help it to hydrate and reduce the gritty texture which can come from rice flour.

I love this product. Very easy to use as a replacement for regular flour, from baking to thickening gravy. Five stars for the product, one star for the Velcro like zipper on the bag. Even when I close it as tightly and carefully as possible, you can squeeze the bag and air comes out. Insects have gotten into these bags several times.

This flour is great, I normally use King Arthur…but I found out that they have nasty fillers/gums in their flour. This blend is healthier and I’ve used it to make pasta noodles, biscuits, cookies, pie crust, etc. Very versatile and gives a great consistency that isn’t too gritty.

I have a friend who recently discovered he has a gluten allergy. The last time we were together he complained that it's difficult to find gluten free desserts, muffins or cupcakes that don't feel like lead or the texture is off. I found a recipe recently for gluten free morning glory muffins (with carrots, raisins and walnuts) recommending this flour. Well - those muffins turned out AMAZING! Light, airy and soft. THEY ARE DELICIOUS and, having tried with other gluten free flours, cleary it was Bob's that did the trick! RIP Bob! Ya done good!

Some point over the last few months this mix of grain flours and xantham gum has changed. Most of my home baked recipes are not turning out the same even when using Bobs recipes that I have baked a hundred times are turning out chewy, too wet, and quite frankly carrying a tad more metallic flavor than they used to. Is anyone else noticing this?!

This flour is a game changer for all gluten free eaters. My muffins made with this flour are as good or better than ordinary flour. My pantry is never without it. The almond flour is equally great. IT'S REAL BREAD!!!! I used bob's one to one to make a sourdough starter, then made a basic sourdough loaf. It is the first time since I developed Celiacs that I have had real bread, not semi/sorta/kinda like bread. Thanks! (Starter did need more heat than a bread flour starter. I used a 74 degree seed starter matt)

I use Bob's for all of my cooking and baking needs. I've recently started preparing historical recipes for my website, and it's great to be able to substitute Bob's 1:1 GF Baking Flour wherever a recipe calls for all-purpose flour, so that I can enjoy the recipes. I made pizza with BRM gluten-free flour for my daughter who just found out she has celiac. She loves my regular homemade pizza, so I was thrilled when this GF pizza was so good! It was chewy and crispy and delicious! I am so happy to find this flour that we can use to make all kinds of yummy GF goodies. I couldn't find a recipe for pizza dough on the BRM website, so I used a recipe I found on goodforyouglutenfree. 10/10 will make it again!
