Prep. Plate. Serve
1. Heat 1 to 2 Tbsp. oil in large skillet on MEDIUM heat. Add ground chicken; cook and stir until cooked through. Remove from pan; set aside. While meat is cooking; roughly chop vegetables into small pieces.
2. Once chicken is removed, heat 1 to 2 Tbsp. oil in same skillet. Add chopped vegetables and sauté 3 to 4 minutes until tender. Squeeze pouch to separate rice; add rice and 2 Tbsp. water to skillet. Cook and stir an additional 1 to 2 minutes until heated.
3. Return cooked chicken to skillet; add 3 Tbsp soy sauce. Stir to combine and heat through. If desired, add cooked scrambled egg.
