You must have changed the recipe. I have been using these for years and not as melt in your mouth and flavorful anymore. Taste is almost waxy and hard when eating on its own. Hoping this is just an anomaly and not the recipe mixing forward. Will have to find a better bittersweet chocolate chip otherwise.

I tend to switch between Ghirardelli & Guittard chocolate chips for baking. I find that Ghirardelli chocolate chips have a more Woody flavor profile whereas Guittard is a bright acidic flavor profile. Unfortunately chocolate chips keep increasing in price, I remember when I would be able to get a bag of these for under $3. I wish that these companies would make bigger flat chips for Gourmet cookies.

Something has been happening with these chips in the past few months. The chips no longer melt in your mouth. They are harder and dryer almost as if there is less cocoa butter in them or it has been replaced with another oil. I thought maybe it was just a fluke with one bag, but just opened another bag and they are the same - hard, dry and less flavorful. As expensive as a bag of these are now, it's extremely disappointing that the quality has decreased so dramatically. These used to be the best and now I will switch brands.

I have been using these baking chips in all recipes that call for chocolate chips for many years now, and refuse to use anything else! They are PERFECT in every way. The chocolate is just bittersweet/semisweet enough, and the cocoa really shines through with its rich, deep, complex flavors. They are slightly larger and wider than a typical chocolate chip, which makes them great for things like chocolate chip cookies or brownies as they melt just right!! Ghirardelli’s chocolate is just great yo make hot chocolate during the winter time. But any hot chocolate Italian hot chocolate this will be perfect for the creamy results a touch of passion and sweet is this little magic kisses. Highly recommend it

My favorite baking chocolates. They come in disc shapes and not the typical chocolate chip shape. I also snack on these every so often when I crave sweets. One serving is 19 chips and the sugar content is not that bad for one serving. This has enough bitterness but sweetness. The perfect dark chocolate baking chip.
