@bananapeelkitchen Instant brown rice is one of my baking secrets! 🤫 I turn it into a flour by pulverizing the grains in my vitamix . I often use it in place of All Purpose Flour in my cookie recipes. It's an easy way to get whole grains in a cookie! I've also made regular (non-instant) brown rice flour, which results in a grittier and earthier cookie. Instant rice is simply par-cooked, so the cookies come out fluffier. Both kinds are delicious. Is anyone else obsessed with target Good & Gather products (not an ad)?! I've discovered so many nutritious and affordable pantry products through this line that I've been adding to my cookie recipes. Like instant brown rice! But also ... freeze dried fruits, dried beans, dried lentils, dried peas. Please share in the comments! 👇 I’ve been singing the praises of whole grains this week because they’re such a great source of energy, vitamins, minerals, and fiber! I pictured a few of our favorites from Target. 🌾Brown rice - This isn’t super high in fiber but it has a little more than white rice. Brown rice typically takes longer to cook than white rice which is why I usually buy the instant variety. Even though a slight amount of nutrients may be lost in the processing, t’s still a whole grain that provides about 2 grams of fiber per ½ cup serving. We have a lot of burrito bowls and stir fry here and brown rice is the perfect grain accompaniment. 🌾Wild rice - Again I save time by buying the pouches of cooked wild rice. Wild rice has about the same amount of fiber as brown rice but it has a little bit more protein. It has kind of an earthy, nutty flavor which is wonderful when mixed in with roasted vegetables or soups and stews. The one pictured is corn-based but we also eat a lot of brown rice and quinoa pasta. Legume pasta like Banza (eatbanza ) is another great option that has more protein and fiber than corn, rice, and quinoa options. ⛔ A note about cross-contamination and grains: If you’re following a strict gluten free diet due to Celiac disease or are anaphylactic to wheat, be sure to read labels carefully. Two of the items pictured above (the brown and wild rice) do not contain wheat but there is an advisory statement that states they are packaged in a facility that also handles wheat. Grains are at a higher risk of cross-contamination because of how they are grown, harvested, and packaged. Always check those labels!
