While not necessary, I like to use a lard stick after a wash with a quick pass and wipe down. This is the companion to the Staub Dutch I bought years ago and still looks new. Now to figure out what to cook tonight.

    Ordered 25JAN21, finally after sending the fourth damaged and chipped up braisers back I received a fifth perfect unit on 05OCT21. Its not UPS, the blame falls on the engineer who designed a box where the lid and base aren't properly isolated. I'm sorry but all future purchases will be in a store so I can do a full chip inspection. I have to say it is BEAUTIFUL. Sorry the 8 months and 4 returns caused the low rating.

    I have had my braiser for less than two weeks and there are a lot of hairlines cracks like crazing showing on the bottom already. I have followed the instructions to preheat in low (in my case the lowest heat setting for 10 mins) then slowly increase to no higher than medium but this is happening in less than two months. My other pieces did not do the same, so I’m not sure if this is a defective piece or the lighter color pots and pans tend to do this. This is b grade item but still it shouldn’t like this.....

    Hello, The crazing happens with the cast iron expands/contracts at a different speed than the enamel. That doesn’t mean that the product is bad and it won’t work, it is just a visual aspect. I will email you our Warranty process.

    I own a lot of cookware. A lot. From lots of other Staub pieces (also great) to French stainless steel and tinned copper pieces. This has really earned its keep - so much so that it just sits on the stovetop now instead of going back into the cabinet. Like others have mentioned, it heats evenly and is incredibly versatile - wide enough to sear meat without crowding, enough surface area for quick reductions, great for rice dishes, sautes, stews, shellfish, sauces, it's actually my go to pan for boiling spaghetti noodles (and uses less water) or cooking/finishing pasta in sauce. I haven't used it as a roaster yet but it would also do a fantastic job roasting a good sized bird because of the shape and depth. It really has a surprisingly generous size and width despite being only listed as 3.5 qts. The rounded sides are perfect for even heating and working with a spoon/spatula etc. and I do prefer them over a straight sided saute pan. If you're having a hard time deciding on this one, you should get it. This one piece can do the job of numerous others, cleans up well, and looks good doing it.

    This braiser also doubles as a saute pan. Works great on the stove top, with or without the lid. Perfect to shallow frying and saute, plenty of room for both. Love the dark interior, helps achieve perfect color on food, and also resists staining from tomato based recipes. Oven safe and makes amazing frittatas, giant dutch baby pancakes, and crustless quiche. Also great for braising brisket, short ribs, and roasting chicken, turkey and beef. Oven to table, looks beautiful and keeps everything nice and hot.

    I just purchased this 3.5-qt Braiser. So far I've only made a pork shoulder in it, which turned out absolutely divine and only took about 2.5 hours. I did have to cut the shoulder in half to fit. I'm hoping the coating will be resilient and last a very long time, as I plan on using this braiser often. The grenadine color is lovely.

    The braiser is a nice size for everyday cooking. I got this to replace the daily pan I was using before. This holds a good amount of food to cook for a family and is large enough for place strips of bacon flat in the pan. The heavy duty lid is good for braising but I also got a glass lid so that I can see eggs when they are cooking.

    [This review was collected as part of a promotion.] That should tell you how I feel about this pan! Frying in this pan is such a delight! Food turns out moist, tender and cooked to perfection! This can be your everyday pan. You can fry chicken, fish, steaks! You can roast beef, pork, bake a ham...anything!! Spaghetti sauce, scalloped potatoes, the list goes on! Before using this pan, make sure you wash and season it with oil, with your stove temperature on a low setting. I only do this for a few minutes, then I wipe out the excess oil and it’s ready to go. If you’re frying, I find it best to cook your food in a heated pan that’s set on a lower temperature, and I adjust the temperature up or down, if need be. Don’t try to turn your food over too quickly. If your food is sticking to the pan, the pan should release your food on its own and that’s when you should turn your food over. I know that some people do, but I don’t use metal utensils in my cookware, nor do I put any of them in the dishwasher! I find that cleaning my Staub pan is easy peasy. Just follow the instructions that come with your booklet and you should be good to go. I’m not a great cook, but I learned some of these trick by watching others on you tube or by trial and error! Staub makes a wonderful product and this beautiful dark blue braiser is no exception. I have a variety of pieces and I love them all! Happy cooking everyone!
