I was so excited to get my hands on Mary Ellen’s book. Although no one in my family has a diabetes diagnosis, I have enjoyed following her business for years and have learned so much through her content. This book reflects her strengths as an educator and recipe developer. Many of the recipes are family-friendly, quick, and easy. She uses common pantry ingredients, which I appreciate. The photography is drool-worthy as well. My family has already benefited from her approach to combining fat, protein, and fiber, a strategy that can be transferred from her recipes to the other snacks and meals that we prepare.
