Q: I found recipes that require baking bread in a dutch oven with the lid closed over it, placed in an oven. Will the stainless steel knob withstand the heat?
A: Yes, up to 500F

Q: can we use these to bake bread ... they have to go in the oven at 500? I feel like since it's the maximum temperature, that it might melt?
A: The melting point of cast iron is around 2,000F, so it 's ok for broiling and cooking at 500F. Note however, that it will get quite smoky. The smoke will not be from the iron itself, but rather from oil and food burning. It is particularly important with cast iron that you allow the cookware to heat up and cool down slowly. If you are broiling, for example, preheat the cookware before putting it in. Then, once done cooking, it's best to let it cool down in the oven with the heat turned off, so that the iron doesn't receive a shock in temperature difference. Thermal shock can cause warping or cracking.

A: Yes, it can be used in standard home ovens up to 500F. Please note the whole piece, including handles and knob will get hot.
