[This review was collected as part of a promotion.] I just recently received this knife as a gift from a relative and let me tell you, it’s sharp sharp. I’m not a knife aficionado or anything but if it makes slicing through sourdough easier than blinking then I think it will solve most of your bread problems. This knife is also incredibly comfortable to hold and the weight is perfect. You can place the knife on top of whatever you’re trying to cut and it will glide through it with minimum effort or force on your end. Knife is a 10/10 without a doubt.

Versatile knife for all flour-based constructions, from bread to cake. It is so sharp, it will slice through strawberries sitting on whipped cream without submerging them in it. And through layers of cake without squeezing out the filling. I’ve been using it daily and there is no sign of reduced sharpness. Truly an excellent product. The birch wood develops more friction over time, furthering the grip. Its balance and provenance are evident from the first touch. Life should be full of things like these.

[This review was collected as part of a promotion.] I’ve been building my set of Miyabi Birchwood knives for years, and the bread knife was the last. The knives are works of art and the blades hold a scalpel edge for a long time. I assume that I will never need to sharpen this beautiful, serrated bread knife.

This is an absolutely amazing bread knife. Incredibly sharp and easy to hold like all the Miyabi top end knives. You will not be disappointed with this once in a life time bread knife purchase. Expensive but well worth the investment.

Nice long 9.5 inch blade with gorgeous Birchwood handle. Looks beautiful on the table for bread slicing when entertaining. Always get lots of compliments from guests who are not used to seeing a beautiful Japanese knife as a bread slicer.

I purchased this knife because I knew it would look great on my table with all the crusty breads I serve. Come to love it for so many other uses. The SG2 steel and the serrations are great for cutting melons, pineapples, onions and tomatoes. Cutting angel food cakes and sponge cake with this knife prevents crushing. I'm really surprised at all the things I am able to do with this knife and find it to be one of the most useful knives I own.

This gorgeous serrated knife makes quick work of bread, tomatoes, melons......basically anything with a harder outside and softer interior. The Birchwood handle is unique with its own patterns. The Damascus style blade gives 101 layers of high carbon steel that is super sharp and stays that way. The Japanese craftsmanship is shown in every detail all the way down to the traditional Katana style watermarking by the blades edge.

I love that this is a little longer than other bread knives I've seen, so it can go through sourdough loaves. I love the design on the blade because it is very unique and the handle is beautiful.
