[This review was collected as part of a promotion.] Likes: - Steel: It's FC61, a fine carbide "Swedish" steel (AEB-L/13C26/Hitachi Gin 5/Kanehide PS60), tough enough to resist micro-chipping the apex, hard enough - at HRC 61 - to resist rolling the apex, all of which means less frequent honing and sharpening. - Blade Profile: Thin spine, taper-ground (for low-effort slicing); lots of flat belly (for push-cutting without leaving "accordions" of thick-skinned vegetables); short length (for better control); and rectangular Granton (kullenschliff) indentations somewhat like the ones on Glestain knives, which seem to be the only ones that do much to keep product from sticking to the blade. - Handle: Thin enough to encourage "choking up" on the blade, heavy enough to give neutral balance at the comfortably-tapered bolster (ferrule); doubtless durable, but I won't know for some time. Dislikes: None (though I wish the Miyabi Evolution line included a 5.5in/140mm nakiri with a spine width around 1.7mm)

The Miyabi Evolution series are so much more comfortable than any other knives we tried, even super expensive ones. And they have an incredibly sharp edge that holds up very well.

[This review was collected as part of a promotion.] I have a couple of Miyabi knives and they are all extremely sharp and effective. I wanted this 5.5” knife because I noticed I still was using my 5” knife from another set all of the time but it wouldn’t hold an edge very well. The smaller size fits my hand perfectly and it is a great multipurpose tool. Most importantly, I knew if I got another Miyabi it would hold an edge - and it does!!

I had never used a Santoku knife before and I am so happy I purchased this one. The blade is extremely sharp and the knife itself is beautiful. The Evolution line has an asian inspired western handle, comfortable for both the right and left handed. The Steel used in the blase is forgiving like a german knife, resistant to knicks and chips on the cutting edge. Easily sharpened back to sharp edge, it still has the feel and angle of an Asian knife.

The Santoku is one of my favorite knives to use in the kitchen due to the versatility of the blade profile. You can use the santoku on meat, poultry and vegetables, and will find that it is easy work with the triple-rivet handle which fits perfectly in the hand. This knife is sharp and will retain it sharpness due to the FC61 steel and the special ice-hardening process.

Evolution knife is exceptionally sharp, this prep knife is a medium-size and versatile knife. This knife size is not daunting for me and more comfortable in my hand better. It is slightly bigger than the prep knife. It is enjoyable to cut and slice everything such as fruits, vegetables, meat, poultry, butter, cheese, and even crusty bread. Indention on the blade creates a barrier between the food and the steel, preventing food from sticking. Evolution knife is made from revolutionary fine carbide FC61 steel, these knives offer the signature sharpness for which Japanese knives are known. Hand washing is recommended.

The sharpest tool in our shed. This knife slice cucumbers paper thin and juliennes carrots like match sticks. We prep a lot of fruits and vegetables and this knife is amazing. The weight and comfort are perfect.

A smaller santoku knife, this is a great Japanese knife. The FC61 steel of the Evolution santoku is a nice and durable blade and has a great sharp edge retention on it, perfect for chopping smaller produce, meat and veggies. The weight is really nice on this knife.
