A: The formula of ingredients now in Target and online does not contain sugar.

Q: Why does it say to store it in the refrigerator door specifically?
A: Mayo, ketchup, mustard, relish, bottled water, soda, juice all do best in the fridge doors. Why? The doors are the warmest area of the fridge and should be reserved for foods that are most resistant to spoiling. Foods that can stand up to temperature fluctuations work well in the fridge door.

Q: How long will this product last in the refrigerator once I open it?
A: Sir Kensington's mayonnaise lasts longer than homemade mayonnaise. There are a few factors that contribute to its longer life: We use pasteurized egg yolks to reduce the risk of food-borne illness. Most grocery store shell eggs are not pasteurized. Because mayonnaise is not cooked, pasteurized eggs ensure the safety and stability of the eggs in our mayonnaise. Second, we add a combination of lemon or lime juice, vinegar, and citric acid (depending on the specific product) to reach a pH level that preserves the mayonnaise. Additionally, our mayonnaise is made in a food-safe facility that greatly reduces the risk of cross contamination.
