Ashley Strickland Freeman is an award-winning food stylist, recipe developer, author, and editor based in Charleston, South Carolina. She received a degree in Journalism from The University of Georgia and a degree in Culinary Arts from The French Culinary Institute (now The International Culinary Center). Ashley has written and contributed content for more than 45 cookbooks and publications including Southern Living, Cooking Light, Weight Watchers, Betty Crocker, Pillsbury, Lodge Cast-Iron, Mars, Wonder Bread, and more, and she most recently was the food stylist for Delicious Miss Brown on Food Network. Besides editing, developing and testing recipes, and creating content for @ashleystricklandfreeman on Instagram, she loves being a mom to son Anderson and traveling with her husband. I was initially apprehensive about purchasing this book as I have lived most of my life in the Northeast and therefore have not experienced Dukes or even been a huge fan of mayonnaise. Part of this is that I didn’t understand how truly versatile mayonnaise could be in different dishes. For me, mayonnaise was just for coleslaw and potato salad or a condiment for a sandwich. I am now not only converted to Dukes, but also am absolutely amazed at the diverse ways in which mayonnaise can be used to improve the taste and texture of different types of food.
This cookbook is truly incredible. The photos are beautiful and the recipes are clear and very easy to follow. There are also awesome tips scattered throughout (like “A little baking soda is my secret for making the eggs easier to peel” or “A bundt pan makes cutting corn off the cob easy and mess free” that are super helpful. The organization of the book by course (breakfast and brunch, lunch, dinner, sides and snacks, and desserts) is easy to follow and intuitive. There is also a great combination of recipes that I have made before (cinnamon rolls, pork chops, crab cakes, lobster roll, and ice cream sandwich cookies) and recipes that I have never tried to cook but am excited to try (firecracker shrimp tacos, doughnuts, scones, pork banh mi, coconut crusted chicken tenders, tostones, street corn, and sticky toffee pudding!). This book also pays respect to the cradle of Dukes in the South with recipes like pimento cheese grits, buttermilk biscuits, green tomato pie, egg salad sandwich, hot chicken and waffles, chicken with white BBQ sauce, mac and cheese, potato salad, twice baked potatoes, hush puppies, coleslaw, grilled okra, deviled eggs, and apple pie. I personally love that this book is not limited in its scope because I am always excited to try new recipes. Also, how can you not be excited to make or try recipes like maple bacon cupcakes?! It’s tough to pick-they all look incredible!
