Description
Masa, the Spanish word for "dough," is the traditional dough used to make corn tortillas. It is made with hominy, or dried corn kernels that have been cooked and soaked in lime water, which is ground into masa. Masa harina is flour made from dried masa. The nixtamalization process (soaking in lime water) was developed in Mesoamerica thousands of years ago. It loosens the hulls from the kernel and softens the corn for grinding by breaking down the glue-like component called hemicellulose. This process also changes the structure of the corn, freeing the nutritionally rich niacin so that it can be easily absorbed into the digestive tract. In addition, calcium is gained from the lime used as an alkali. The nixtamalization process also balances the amino acids, accessing more usable protein from the corn. Masa harina is most commonly used to make tortillas, but it is also featured in other delicious dishes including tamales, pupusas, and arepas.

We're counting our first attempt at making home made tortillas a success. Researched recipes and ended up using the one on the bag plus 2 tbsp olive oil. TorCooked the tortillas on the grill (which required some fancy timing between pressing and grilling). Important note: tortillas are flammable! Ended up with some delicious fish tacos.

One bag of this can make so many good things!! Homemade corn tortillas are always a million times better than store-bought, and this masa makes ‘em easy and tasty. Also great for tamales and, surprisingly, cornbread!!

Great product and very healthy. Made of masa, the original corn, and much more nutritious than the more modern varieties. We just mix it with water and make pancakes to pile beans and roasted vegetables or whatever on them.

This masa harina produces a superior corn tortilla. The supermarket brand is bleached and bland. With Bob's Red Mill you know it came from whole grain. I don't really care about organic or non-organic, and I like both.

It is the only Masa Harina that I can easily digest. I use it to make "arepas" -- masa harina patties made with Bob's Red Mill masa harina, melted butter, hot water, salt, and a good quality grated cheese. My family loves my arepas!
