A Diagnosis and Decision
For months, Danielle suffered from drastic weight loss, joint pain, and malnutrition. After countless doctor visits, she was diagnosed with a severe form of ulcerative colitis at age 22, just two months after getting married. Despite her expansive array of medications and prednisone steroids, Danielle found herself hospitalized numerous times each year, admitted repeatedly for multiple blood transfusions due to morbidly low hemoglobin levels. Left with a choice between surgery or a life-long weekly treatment with harsh side effects, Danielle began her own research to explore other options. Cooking by Necessity

I have read Danielle Walker's book. An emotional read for sure. After reading her book, I bought her cookbooks. I am on the AIP diet and There are a lot of foods (nightshades) and also lots of coconut in the recipes. coconut I cannot tolerate. She had poured her heart and soul into this lifestyle and has done well for her. It just wasn't for me, so I returned the coobook.

This book is so thorough, and beautifully done. A great intro book for anyone with allergies, or just trying to work healthier choices into the weekly mix. Very impressed with the 8 weeks of menus and shopping lists... gorgeous photos... and valuable information about food!

Danielle Walker does it again with her second gluten/grain-free and paleo cookbook, "Meals Made Simple". She includes meal plans, shopping lists, recipes that use leftover ingredients, and recipes to make a container of mix so you can simply scoop out what you need for one meal. You don't need to be gluten-free to enjoy the recipes. In fact, my own family is not (I am the lone black sheep) and they gobbled up everything that I made! My favorites: pizza pasta, ropa vieja, chicken tikka masala, vegetable biryani, and fish tacos. I definitely recommend this book!!
