Made cookies. Came out great first try. Just wait for them to cook before touching them at all otherwise they will crumble. Also if you're storing the batter in the fridge pre cut the cookie shapes otherwise they harden a bit and they won't melt into the cookie shapes.
Try following the pancake recipe on the back of the package!

This product works perfectly as a 1:1 flour substitute in every single thing I've tried it in: baking any recipe for cakes, brownies, cookies, breads, fritters, etc as well as a thickener to make gravy or cheese sauce. I've served it to people without telling then that what they're eating is gluten free and when I do tell them it's always the same reaction: "You have to be kidding me, I would never have known!" I cannot medically have grains anymore so this flour mix has made my life so much more enjoyable and easy, there's nothing I can't have now since this flour works in everything I want to make. I have tried so many other gluten free flour substitutes but this one is the absolute top of the heap - NOTHING ELSE COMPARES - NOTHING ELSE EVEN COMES CLOSE. For those of us who cannot have any grains at all this is the product to make your life fun and tasty again!

Used this as a 1:1 substitute for almond flour in Wholesome Yum's almond flour bread recipe. It turned out perfectly! Only complaint is this flour is very pricey considering how little is in the bag! But a great product.

I almost stopped baking because carbs and my aging body aren't getting along very well. However, by substituting Bob's Paleo mix (and usually cutting the liquid a bit while increasing the leavening a bit), I get delicious meals and desserts (pizza, biscuits, pancakes, cookies, and even a dutch baby) without the food coma! Now, I'm having fun in the kitchen again!

Wow! I made some Paleo blueberry pancakes today with this paleo flour! They were incredibly delicious! I started out making just one batch, but after making a single pancake, I immediately doubled the recipe! I followed the directions but found that I did have to add more 2% milk to loosin it up and make it "pourable". I also added a touch more honey to the mix. Finally, I added a good handful of fresh blueberries to the mix and cooked them on our griddle. I made them good sized, abt 5ish inches across, and they cooked up very nicely. I did have to cook them a little longer to be sure the inside was done. They were not bitter at all ( I tested the batter before cooking and added a touch more honey to take away the small amt of bitterness) The texture was very nice, even tho the batter looked like it would be grainy. They were not! My husband was very pleasantly surprised, and these will most assuredly go into our regular rotation! Thank you Bob's Red Mill for making this so easy!

I'm not paleo, but I was looking for a decent baking flour that was lectin-free. (I am an avid fan of Bob's 1:1 gluten-free baking flour, but there are a couple of ingredients in there that can cause problems if I eat them too often.) Bob's Paleo Baking flour comes as close as anything I've found yet. It does contain Almond Flour and Coconut Flour, which can be a bit tricky to bake with, so it's not perfect. Or maybe I haven't mastered the techniques yet. One of the most common recipes I make is the pancake recipe on the back of the bag. Flat things tend to bake easier with the two aforementioned flours. However, instead of making them on the stove--which either burns them or leaves the gooey inside--I bake them on parchment paper in a 375 degree oven. I'll bake them for 7 minutes on one side, then flip them over and bake for another five minutes on the other. In my oven, I find the top rack works best. For those concerned about a coconut taste, there really isn't one. If anything, I'd say there's more of a nutty, almond taste to the flour, without being quite as sweet.
