I love the Pearl Barley and include this in making soup. I cook the barley according to package directions, and then separately brown small pieces of beef with some onion and a little olive oil, then add beef broth and chopped carrots and celery - then I add the pearl barley that I have cooked separately. I don't have a set recipe, but add salt and pepper, and maybe a bit of minced garlic and cook till I think it is right - I like the barley in my soup. I make a big pot for my family and then we can have leftovers for another day or two.

Pearled barley has nutrients and fiber removed when the pearling removes the hull. . I was shocked that a brand I otherwise admire would sell pearled. barley. Their excuse is that otherwise it would take longer to cook.. That has not been my experience with whole grain barley and I note that many reviewers here found more cooking time was needed. I resent that Bob's Red Mill decided to prioritize cooking time over nutrition and fiber content, hidden in the fine print most people would not know to look. Barley is nutritious and delicious, get the real deal with whole grain barley. For years our family has enjoyed mugicha, a tea made from roasted barley. After years of buying it pre-packaged in tea bags, we decided to try roasting it ourselves. Roasting the barley in a pan on the stove top is simple, and the result is a much fresher, robust blend of mugicha. Thanks Bob's Red Mill for making this delicious drink available !

I like using barley, and its very difficult to find it in stores. I took one star off just because it seems to take a long time to cook, or maybe it just remains a bit chewy more-so than I thought it would be. I love barley in soups, so I use a little less barley in my soups etc than I would use rice, or quick-cooking barley, for example. I enjoy variety in the grains that we use, and barley is a good alternative to the more well known grains.
