Description
The 10-12% protein content in this all-purpose flour ensures good gluten development and a satisfying texture, so it’s better suited for yeast breads than cake flour or pastry flour. Need self-rising flour? To each cup of flour, add 1 1/2 teaspoons of baking powder and 1/2 teaspoon of salt. Bleaching agents and bromate are sometimes added to flours, but not ours! The bleaching process makes flour whiter, but we use a sifting process to achieve the same result. Bromate can be added to flour to enhance the rise of the dough when baking, but we opt for adding malted barley, which has the same effect naturally.

The garbanzo flavor is awful. I love that it’s gluten free, I wish the indicator of xanthum gum was on the front of the package, I had to go back to the store for it. But the OVERWHELMING garbanzo flavor is HORRIBLE!

We are very sorry that you've experienced this issue with our Gluten Free All Purpose Flour and thank you for letting us know. Raw dough/batter made with this flour can have a very strong, metallic flavor because of the bean flour used in the mix but this flavor typically mellows once baked. For this reason, we do not recommend tasting raw cookie dough or batter because the taste should change and mellow considerably once baked, but we apologize if this was not your experience. We do not add xanthan gum to this blend because different types of baked goods typically require different amounts of xanthan gum to be added; yeast bread for example will require more xanthan gum than cookies. Without xanthan gum added, this flour can be used for a wider range of baked goods. We do have our Gluten Free 1-to-1 Baking Flour that does not contain bean flour (and that does contain xanthan gum) so this may be an option in the future.

I really have enjoyed this flour. I made both a savory (herb and cheese) bread and sweet (banana) bread. Both turned out great and I didn't notice any lingering "bean" taste. I was also able to avoid adding xanthum gum with this flour, for the savory bread I used flax meal and for the banana I tried an egg- both turned out perfectly.

I purchased this and have used this (only) for the Babycakes NYC cookbook recipes. She has created wonderful cookie recipes with this flour. And the "blondies" recipe is a favorite. I've made her recipes for non-gluten free eaters and they are a hit. However, this flour is what I call "Gluten-Free 1.0" : You won't mistake it for all-purpose wheat in recipes. You may get something wonderful, but it won't taste like your old gluten-rich faves.

Texture of baked good was great, but the legume flavor didn't fully bake off, and the cookies made everyone who ate them super gassy. I'm just not sold on considering such a bean-heavy flour "all purpose." I wouldn't use it for many purposes at all.

I had to write this to counter several other reviews. We have to be GF bc my husband has Celiac, so I'm always looking for non-rice flour alternatives. This flour works for a lot of things and, while I wouldn't recommend eating the batter before it's cooked (the raw bean taste is truly awful), it tastes good once baked. I use the "sweet biscuits" recipe as a base for sweet and savory biscuits/scones all the time (I use half the sugar for the savory, and use buttermilk whenever I can). I also use this flour in quick breads with great success. I make the scones & breads for my non GF friends when they come to visit, and everyone likes them.

I bought this flour when my regular brand wasn't in stock. I've always had good luck with BRM products. My daughter requested cinnamon rolls, and I started into them using this all purpose GF.. she has celiacs. Well, I could initially smell it.. smelled a bit like olive oil, so then tasted the finished dough and it was AWFUL. It tasted like dried peas.. it was inedible. Especially as a cinnamon roll. Threw away the dough and the rest of the bag.

Do not buy this flour to use for anything sweet. It smells and tastes awful. They require that you add Xanthan gum. We had to throw away an entire batch of cookies as well as this bag. A huge waste. Bob's really needs to update the packaging on this.

I've substituted this flour in cooky, scone & biscuit recipes for my gluten free friends & everything came out great. It is the most similar in handling & crumb to any wheat flour. The flavor is mild & mostly I use it for savory baking.

Great flour when you have to have gluten free and are allergic to rice. There are not many All-Purpose Gluten Free Baking Flours out there without rice flour that are as versatile as this flour. I just wish that you would post more recipes using this flour. My husband prefers the things I make with this flour, being a diabetic, the extra protein in the flour helps him out also.

My son has celiac disease and started throwing up after my mom made cookies from this flour .. she used a few years ago and no reaction.. I have the lot number of the back .. is it possible that gluten was used in the ingredients? He has not had this kind of reaction in years ..

Love this flour to make a roux for gravy. It's never lumpy as with regular flour. Also, tried other gluten free that had potatoes and it turned into a blob.

accidentally bought this after making the same mistake a few years ago. this flour is so bad. tastes overwhelmingly like beans. tried to make gingerbread cookies for christmas and we didnt even turn it into cookies bc the dough tasted so bad. such a waste of all the other ingredients. huge bummer

This has an odd, unpleasant taste. I think it might be from the fava, as I regularly use all of the other flours in the blend. I’ve bought it twice and both packages had the taste. The 1:1 blend has been much better for me. This would be okay for brownies or something with a strong flavor, but was bad for sugar cookies and pumpkin bread we made.

I've tried to make their recipe for GF chocolate chip cookies twice now and both times the cookies completely spread out and it becomes a waste. I consider myself a professional at home baker, I follow the recipe to the T and they still come out horrible. Such a waste of money, very disappointed in this product.

Amazing flour! I also use 1-1 baking flour. But, the store was out of it and thought I’d try this. I use for vegan/Gf cookies and brownies and I add BRM xanthum gum. The person who said “yuck” must be ultra-sensitive to the smell of beans, bc there was no discernible odor (it was not like opening a can of beans). And speaking of bean flour—yum!! The protein and fiber far outweighs normal flours and this one I can easily digest. The macronutrients in this flour help me to stabilize my blood sugar. Healthy and delicious!
