Teff Flour is a pleasingly light, uniquely flavored, 100% whole grain flour. Ethiopian households have been using teff flour in their baking for ages. A favorite teff dish eaten at almost every Ethiopian meal is a flat, crepe-like bread called Injera. Whole Grain Teff, an ancient East African cereal grass, is a nutritional powerhouse. It is the smallest grain in the world, about 100 grains of teff are the size of a single kernel of wheat! Compared to other grains, it has a much larger percentage of bran and germ so it's a very good source of dietary fiber, protein, iron, amino acids, vitamin C and calcium. Another teff flour benefit is the calcium content that significantly surpasses that of all other grains. I use Teff Flour in the America's Test Kitchen Gluten-Free Whole-Grain Four Blend, developed by them. The Teff Flour is an essential ingredient and the foundation of this flour blend, and I really enjoy the flavor of my whole grain, gluten-free baked goods. I am Ethiopian raised by Teff cultural food. Bob red Mill used to have a good quality dark teff Flour. I bought even the bulk one. But this one is not a real teff flour. If you wanna make injera Do not buy it. I know most Ethiopian who makes enjera at home don’t like it. Just stay away from this teff flour,till they bring that dark good teff flower !!

I ordered half a dozen bags and began experimenting with making injera, an Ethiopian steamed sourdough bread. The initial experiment was a success. The biggest danger was that we couldn’t stop eating it!

I had just discovered I have sensitivities to several things, among which are gluten and wheat. Since I am game to try anything, I bought several types of flour to bake with, one of which was the teff flour. The package says it is good for baking so since gluten-free bread is quite pricey, I popped this in the bread maker. The flavour is akin to rye, without the bite, and is a little lighter in colour. It seemed to be a little drier as well (previous iterations of bread was made with brown rice flour, which was a bit more moist). I am trying to imagine sweet baked goods with this flour and suppose that the sweetness would work well. That said, I don’t think I will be buying this flour again for bread. The one star off is for the dryness.
