Potato Flour works wonderfully in many baked goods and is a healthy option for gluten-free cooking. Potatoes are a natural source of fiber, B vitamins and iron. Potato Flour attracts and holds water, producing moist yeast bread with a good shelf life. A teaspoon or so added to your baked goods lends a moist crumb, so it is especially useful in gluten free baking. Potato flour also works great in pancake and waffle recipes. Potato flour is a great thickener for sauces and gravies. Are used in place of xanthium gum. This potato flour dissolves well with a fat or liquids. For Christmas I use it to thicken cream turkey sandwiches, our favorite family holiday main dish.

Great flour with a multitude of uses. However… the genius who thought of using a Velcro-like zip closure for such a fine flour should be fired! First, the flour gets into the seal very easily; next, if you try to push air out to seal the bag, potato flour goes everywhere! To top it off, the seal is even more useless at keeping air out, or flour in, so it’s really not a seal at all. It just helps keep the bag closed so it won’t spill all at once if it gets knocked over.

Best whole potato flour. Roux with this potato flour thickens GF sauces and gravies. Adds structure and lift to GF baked/fried goods. Requires a little practice, always err on the side of “less is more.” Makes excellent coating for pan-frying: mix 1c milk, 1 egg, cover fillets in shallow bowl, stir to coat. Remove pieces to bag filled with 1c potato flour, 1tbsp seasoning (Italian, cajun, grilled meat, etc.) shake to coat. Pan fry, turning once. Both sides should be golden. Yum yum.

I’ve been using this for 20 years as an essential ingredient in Bette Hagman’s gluten free Featherlight mix. This mix replaces wheat flour. If you add 1/2 tsp of Bob’s xanthan gum per cup of featherlight, you can successfully make ALL usual recipes except pie crusts. You don’t get any nasty aftertaste from preservative ingredients and it’s always fresh on my counter.

This is a great product for thickening sauces especially if gluten containing products are a problem for you or someone you are cooking for. I also use potato flour in baked goods as it helps give a moist consistency to the finished product. I especially like to use it in my sourdough bread - it helps with texture and moistness and my strain of sourdough starter seems to love potato flour and gives me a great rise when I include it in my dough.
